Cooking Instructions:
Our corn tortillas are lightly toasted to be heated on a comal or dry frying pan and enjoy that authentic corn smell. Cook for 10-15 seconds on medium/high heat on each side and place inside a tortilla warmer (sold separately) or inside a clean folded tea towel, this is an important, often forgotten, step which allows the tortillas to stay nice and soft. For tortilla chips or tostadas, deep fry at 180 degrees for 3 minutes or bake at 180 degrees for 9 minutes.
Why buy tortillas rather than making them?
This is a great question and it comes down to a number of factors. If you enjoy the experience of cooking, getting the dough between your hands and creating something from scratch you should invest in a quality tortilla press and a bag of masa harina and get started! There are a couple of drawbacks to even the best homemade tortillas. With a press it is difficult to get tortillas the ideal thickness. They tend to end up a few millimetres too thick, resulting in a doughy taco or bendy tortilla chip. Secondly, getting the masa flour the right consistency is either hard on the wrists and time consuming, or it gives your home mixer the workout of it’s life… Masa dough is not as soft as flour and lacks the gluten flexibility so it requires a lot more work. If the perfect consistency isn’t achieved you’ll get brittle tortillas.
Buying Tortillas from a decent tortilleria, you will taste and feel the experience that has gone into these flat-breads. They will be strong yet malleable and consistent in their thickness and taste. The only drawback is that you’ll have to wait 24 hours for delivery…unless you pay us a visit and we can treat you to one straight off our machine if you catch us on a production morning.

Storage
Best served within 3 days of receiving. Store in fridge. Suitable for home freezing.
Shelf Life
We place a 5 day best before date on our tortillas. This is based on the assumption they spend up to 24 hours ambient in the transit system followed by being stored in the fridge. If you do not refrigerate our tortillas you can expect the tortillas to last as long as other fresh breads (1-2 days).
