Bring a little more colour to your tortilla making. Our Blue Masa Harina is made from premium nixtamalised blue corn, bringing its distinctive natural blue-purple colour, richer corn flavour and a little more character to whatever you’re making.
Blue corn has a slightly earthier, nuttier flavour than white masa harina and produces tortillas that look every bit as good as they taste. The colour comes naturally from the blue corn itself – there are no artificial colours or flavourings.
We wanted to make great-quality blue masa harina easier for UK home cooks to get hold of, so you can make proper blue corn tortillas from scratch without having to hunt down specialist imported flour.
Masa harina is made from corn that has undergone nixtamalisation, the traditional process at the heart of tortilla making. Add water and salt and it forms a soft, workable masa ready to press and cook at home.
And don’t stop at tortillas. Blue masa harina can also be used for tamales, gorditas, sopes, pupusas and plenty of other Mexican and Central American dishes – anywhere you want that distinctive blue corn colour and flavour.
How to make corn tortillas: Add water gradually to the masa harina with a pinch of salt and mix until you have a soft, pliable dough that holds together without sticking excessively or cracking around the edges. Divide into balls and flatten using a tortilla press or between two flat surfaces.
Cook each tortilla in a hot, dry frying pan or comal, turning until cooked through with some light browning. Stack the cooked tortillas immediately in a tortilla warmer or clean folded tea towel so the trapped steam keeps them warm, soft and flexible.
White, yellow or blue? White masa harina has the mildest, most familiar corn flavour. Yellow has a slightly fuller, nuttier character and naturally golden colour, while blue has a more distinctive earthy, nutty flavour and its characteristic natural blue-purple appearance. All three are brilliant for traditional corn tortillas and other masa-based dishes.
Shelf Life
See the best-before date printed on the pack. Masa harina is a dry product and keeps well when stored correctly.
Storage
Store in a cool, dry place away from direct sunlight. Once opened, reseal the bag securely and keep dry.
